When I was 15 years old, I had a dream to someday open a vegan restaurant; to show people just how delicious and satisfying a compassionate diet could be. At age 19, opportunity presented itself and the perfect location for a small restaurant became available in Stratford, Ontario. In 2006, I opened Veg Out Restaurant in Stratford.
It was my goal to create a comfortable atmosphere and "veganize" familiar foods that would appeal to everyone - vegetarian or not. Vegan meals made largely from local, organic, and fair trade ingredients made Veg Out an instant success, but after two and a half busy years it was time for a change. Veg Out needed to move to a larger location and a bigger city. Again, an ideal location presented itself and I jumped at the opportunity to move to 646 Richmond Street in my hometown - London.
